Vegetarian Sandwiches

When I first started my vegetarian journey, I was worried about not being able to enjoy sandwiches. It may sound odd, but as a sandwich enthusiast, this was a genuine concern for me. Over time, I have perfected delicious vegan and vegetarian sandwiches that can make meat lovers' mouths water. I'll share with you my top 5 go-to sandwiches over the course of my 5 day sandwich series.

I used frozen hashbrowns and season them with chili powder, garlic powder, and my favorite smoky paprika. The smoky flavor of the hashbrown toast pairs perfectly with the avocado, tomato, and egg. Then I simply top it with green onion and sriracha sauce. If you don't like spicy flavors you could also drizzle balsamic glaze on top, which is another one of my favorite toppings.

The classic veggie sandwich is always a crowd-pleaser. It features fresh, vibrant flavors for a delightful bite. While any bread works, toasted white bread adds a classic touch. For extra flavor, mix pesto with mayo to create a homemade Pesto Mayo, and spread it with Dijon mustard. Then layer butter lettuce, cucumber slices, red onion, heirloom tomatoes, and banana peppers. Top it off with a slice of white cheddar cheese. Sprinkle salt and pepper on the tomatoes for a quick flavor boost. Pair it with your favorite chips and a refreshing glass of lemonade for a truly satisfying experience.

Pimento cheese with jalapenos is the perfect balance of bold flavors. The bold sharpness of cheddar, the creamy sweetness of mayo, and the fiery kick of jalapeño harmonize perfectly with a symphony of flavors that is utterly irresistible. Believe me, your taste buds will rejoice.
